Black-Eye Peas with Smoked Turkey and Tomatoes

Don’t we just love one pot meals. This one is easy to put together, easy on the wallet, and yummy to the tummy. Enjoy!

1 (16 oz) pkg black eye peas washed and soaked overnight

1 ( 14 oz) can diced tomatoes

1 medium onion sliced

1 lb smoked turkey legs

2 (15 oz) cans low sodium chicken broth

Approx 2 cups of water (add more if necessary)

2 bay leaves (optional but good to have)

salt and pepper to taste

Remove meat from turkey bones. Rinse and drained black eye peas and place in a 4 quart Dutch oven or crock pot. Add turkey, tomatoes, onion, broth, water, bay leaves and seasonings. If cooking in a Dutch oven bring to a boil, then reduce heat to low and simmer for 1 ½ hours or until beans are tender. Smash a few beans against the side of the pot to test for tenderness.
